THERE WERE LOADS OF EGG AND CHEESE RECIPES BUT I TEND TO USE MY LEFTOVERS WITH MY EGGS AND CHEESE – WHATEVER FRESH VEGGIES NEED TO BE USED OR LEFTOVERS GO IN. I ESPECIALLY LOVE SPINACH, MUSHROOMS, PEPPER AND ONIONS, AS WELL AS FETA IN MY OMELETS. I THINK I WILL TRY:
EGG-VEGETABLE SALAD WRAPS

MANY OF THE BEEF AND PORK RECIPES SOUND INTERESTING BUT I AM NOT A FAN OF LAMB. CHECK OUT:
BEEF TENDERLOIN WITH PEPPER JELLY SAUCE – I HAVE TO LOOK FOR THIS JALEPENO CHILE PEPPER SAUCE IN THE GROCERY STORE
GRILLED BEEF FILLET WITH PORTOBELLO RELISH
GRILLED MANGO BERRY “CHALSA” WITH PORK – THE CHALSA CATCHES MY EYE TO USE OVER CHICKEN AND FISH TOO
PESTO STUFFED PORK CHOPS

THE CHICKEN AND TURKEY RECIPES GAVE ME SOME HERB RUB IDEAS AND SALSAS.  I WILL TRY:
SPICY ORANGE CHICKEN
TURKEY TENDERLOIN WITH BEAN-AND-CORN SALSA – BUT I WILL USE MY OWN BLACK BEAN SALSA
TURKEY BREAST AND RASPBERRY SALSA
TURKEY STEAKS WITH SWEET PEPPER AND CITRUS SALSA
MEXICAN STYLE TURKEY SOUP – SOUND GOOD FOR THANKSGIVING LEFTOVERS!

THE FISH AND SEAFOOD RECIPES LOOK VERY TEMPTING EXCEPT I WON’T WORRY TOO MUCH IF I’M USING RED SNAPPER ORANGE ROUGHY OR HALIBUT – I USE A LOT OF TILAPIA AND HADDOCK. I DO LIKE MANY OF THE SAUCES TO TRY TO FRESHEN MY FISH DISHES LIKE:
DILLED YOGURT SAUCE
BLUEBERRY-PEPPER JAM
GRAPEFRUIT-ORANGE RELISH
TOMATO CHUTNEY

THE CRAB CHOWDER LOOKS GOOD TOO!

I DON’T PARTICULARLY FOLLOW A LOW CARB DIET BUT I DID LIKE MANY OF THE RECIPES AND SAUCES TO TRY TO LIVEN UP MY CURRENT DISHES. SOMETIMES I FEEL LIKE I GET INTO A RUT IN COOKING – LOOK LIKE I’LL BE USING THIS COOKBOOK OFTEN! MAYBE YOU WILL TOO!
