AS USUAL, I DID FIND A FEW RECIPES THAT I MAY TRY. OVERALL I WAS NOT IMPRESSED WITH THE RECIPES. THE SALADS WERE NOT VERY IMAGINATIVE USING MANY OF THE SAME INGREDIENTS WITH A SLIGHT TWIST ON THE OIL AND VINEGAR DRESSING. I WAS HOPING FOR MORE SALADS WITH COMBINATIONS OF FRUITS AND NUTS IN THEM WITH SOME GREAT DRESSING VARIATIONS. THE SOUPS WERE ALMOST ALL PUREED IN A BLENDER – USUALLY I SKIP THE BLENDING AND EAT IT CHUNKY! THE MAIN DISHES USED A LOT OF EGGS AND POTATOES. WHO AMONG US HAS EATEN NETTLES – I THOUGHT THEY WERE PRICKLY? AND I’VE NEVER SEEN DRIED RED PEPPERS THAT YOU CAN REHYDRATE AND STUFF. WELL, FRENCH TOAST FOR BREAKFAST – NOT TOO ORIGINAL EITHER.
I WOULD TRY A FEW RECIPES BUT A LOT OF OIL IS USED IN SAUTEING THE VEGETABLES – I WOULD USE CHICKEN BROTH INSTEAD AND, PERHAPS TRY THE CROCK POT AND SKIP THE SAUTEING ALTOGETHER.
